Under the direction of the Director of Food & Beverage, the incumbent plans and supervises the overall property wine program to include quality, accuracy of inventory, menu development, sales, cost of goods, achieving budgeted sales goals, cultural immersion and education of staff. The incumbent will also work in the restaurants and assist the guests as the room sommelier including all related management functions to ensure a positive guest experience. Primarily responsible to ensure consistency of service through the implementation of policy and procedure, training, certification, recognition, and coaching team members.


  • Develop and manage a wine program that adds quality, value and enhances the guests experience.
  • Utilize and/or create financial reporting tools to properly measures efficiency and financial success.
  • Responsible for specifications and quality of all wine products.
  • Controls wine cost percentages for the property collaborating with the outlet managers.
  • Actively works in the operations during service selling and servicing wine.
  • Responsible for quality, consistency, and presentation of all wine products delivered to guests.
  • Recommends to senior management operational enhancements that support initiatives and promote excellence.
  • Develops employee wine knowledge and skills through continuous education and training.
  • Works with vendors on identifying relevant wines for the property enhancing guests experience as well as sales.
  • Listens to guest feedback on offerings and suggested changes and enhancements regarding both product and services offered.
  • Accountable for property wine inventory and works closely with the outlets to ensure inventory levels are cost effective.
  • Manages and oversees the day-to-day activities of the wine menus, inventory and pricing.
  • Promotes positive guests and employee relations at all times.
  • Maintains a clean, safe, and hazard-free work environment within area of responsibility.
  • Demonstrates a commitment to ensuring responsible gaming and responsible alcohol service by discreetly notifying appropriate management of concerns and observations.
  • Ensures prompt and discreet notification to appropriate management of any observation of illegal acts or internal ethics violations.
  • Stays abreast of the current trends and practices within area of responsibility and communicates pertinent information to management, peers, direct reports and team members as appropriate.
  • Other duties as assigned.


  • Requires a Sommelier Level 2 or higher certification from an accredited source and/or at least seven (5) years of related supervisory experience in restaurant and hotel environment.
  • Must be able to lift/carry up to 75 pounds.


  • Must be familiar with a variety of the field concepts, practices and procedures and have a proven track record in business management, purchasing and record keeping.
  • Must be able to communicate effectively in English, specific to position duties and responsibilities.
  • Strong interpersonal and leadership skills and ability to sustain positive work environment with a diversified talent are required.
  • Must possess basic mathematical skills specific to position responsibilities and be able to balance cash drawer at end of shift.
  • Proficiency in Microsoft Word and Excel required.



  • The Casino environment is hectic, fast-paced and often crowded and noisy. May be exposed to casino related environmental factors including, but not limited to, second hand smoke, excessive noise and constant exposure to general public.
