  • Apply principles and techniques of food safety and occupational accident prevention
  • Manage food safety and occupational safety training requirements across the Food & Beverage Department
  • Perform food safety audits, inspections, and evaluations of retail stores and regional distribution centers to identify potential hazards
  • Implement corrective actions in accordance with regulatory requirements as necessary
  • Ensure food safety compliance by maintaining partnerships with departments including Operations, Purchasing, and Facilities teams.
  • Communicate with federal, state, and local regulators and demonstrate Hard Rock Hotel & Casino’s commitment to a best-in-class food safety program
  • Manage long-term projects aimed at continuous improvement in reduction of food safety risk
  • Manage data entry efforts and programs, database maintenance, and research tasked by other team members
  • Report activities that pose threats to workers’ or customers’ health and/or safety
  • Provide food safety and health assistance to management, supervisors, and employees
  • Develop programs and provide outreach to employees to promote safety awareness and a positive attitude towards a safety culture throughout the organization


  • Implements training programs and learning modules developed for the Hard Rock hotel & Casino Atlantic City property. This includes pre-learning preparations, training collateral, manuals, guides, and visual aids to accompany training programs
  • Conducts training sessions for Food & Beverage standardized training programs, including but not limited to health safety training, occupational safety training, and property programs. Instructional methods include individual training, group instruction, demonstrations and workshops
  • Maintains database and accurate records for training administration
  • Ability to become proficient in e-Learning design and computer-based training
  • Interacts with management and Team Members of all departments, embodying and encouraging a positive work attitude and assessing and assisting with Food & Beverage needs across all departments
  • Ability to become Serve-Safe Training Manager certified
  • Attends conferences and external training programs as requested
  • Collects feedback and data to measure progress and effectiveness of training programs
  • Other assignments as directed



  • High School diploma, GED, or equivalent required
  • Some college required; Bachelor’s degree preferred
  • Minimum five (5) years of culinary experience and 2 years of culinary management experience required, preferably in a casino and/or hotel environment
  • Team-oriented and must enjoy working with and assisting people
  • Knowledge of state and federal employment labor laws is necessary
  • Intermediate knowledge of Outlook, Excel, and Word required
  • Able to exercise sound judgment on an independent basis
  • Strict confidentiality is required
  • Highly organized, meticulous in their work and pays attention to the small detail
  • Willing to do whatever it takes to see to a successful conclusion of any task, project, event, etc at hand
  • Initiative, ability and willingness to work unsupervised
  • Must be articulate and possess a professional appearance and demeanor
  • Punctuality and meeting of deadlines is critical


Work Environment:

  • Duties and responsibilities are typically performed in a professional office setting, but there may be times where you will need to be on the Casino Floor or pass through this area. On the Casino Floor, you may be exposed to casino-related environmental factors including, but not limited to, second hand smoke and excessive noise.
  • While performing the duties of this job, the employee is frequently required to stand; walk; use hands to finger, handle, or feel; reach with hands and arms, talk or hear; and taste or smell. The employee must frequently lift and/or move up to 50 pounds. Specific vision abilities required by this job include close, distance, color, and peripheral vision, depth perception and ability to adjust focus.
